That said, I needed a small amount to garnish the chocolate/whipped cream cake roll I made for Katherine's graduation-at-home party. I couldn't get the melts I usually use at the market, so I bought a bag of white chocolate chips. I only used about a quarter cup.
Since I didn't want to throw out an almost-full bag, I hunted around for a cookie recipe to use up the rest, and found this one, which turned out surprisingly good. They're a bit like thin brownies, and the cocoa in the cookie balances nicely with the super-sweetness of the white chocolate chips.

I'm not a white chocolate lover. Mostly because it's not chocolate. I use this one from allrecipes.com (fabulous cookies!) and you can use whatever chips you like, but I think I need to try this recipe and use the semi-sweet instead.
