Since Katherine is not a fan of cakes with icing, I took the cake portion of this recipe from my BH&G cook book and made a single layer vanilla cake. Instead of the broiled coconut topping I sprinkled it with powdered sugar and topped it with thinly-sliced fresh strawberries. It made a nice, light dessert for summer, rather like a Victoria sponge cake without the jam or cream.
I also like how versatile a single-layer cake is, and this one bakes up nicely. You could top this cake with virtually anything you like -- whipped cream, chocolate chips, other types of berries, a chocolate drizzle, or even some icing. :)

I'm not usually a fan of icing on cake but I do have two exceptions. One is Sander's Bumpy Cake and the other is my mother-in-law's chocolate chiffon layer cake with a thin layer of buttercream frosting between the layers and another thin layer over the whole thing. So there's not a lot of icing but it's just right. That said, I do like cakes with a dusting of powdered sugar. You're right, it's nice and light and tasty!
